Light and fresh Guacamole

What you will need:
3 medium avacados
2 Roma tomatoes, Diced
1 small lime cut into quarter wedges
1 medium lemon, cut into quarter wedges 
2 garlic cloves, grated
1 tsp sea salt (or to flavor)
Pepper to taste

Could also try with onion and cilantro




First I cut up my avocados. Run a knife through the fruit until you hit the pit, go around the hole thing. Twist and pull into halves. I use a knife to get out the pit. Use caution, keep fingers out of the way "axe" at the pit, once the knife is wedged in give the knife a gentle turn and the pit should come out easily. Then use a spoon to scoop out the avocado into a medium size bowl.



Cut your lime and lemon. This is where your guac will get the fresh taste. Squeeze the juice from 2 of the four wedges from each fruit directly into the bowl. Then take a fork and jab into left over citrus, squeeze lemon peel around the fork and work some of the pulp into your dip. Do the same with the lime.


Dice up your tomatoes into desired size and add to dip







Peel your garlic if you haven't already. I  broke my mincer a while ago so I simply use a cheese grater which works really well. I grate the garlic directly into the bowl, use a fork to get the stuff that's stuck on the grater I have found the more garlic you add the spicier it is.





You're ready to mix it up. I use a knife and fork and cut it up, like I'm cutting a streak to keep it chunky, over mixing causes it to be runny.
Now add the sea salt and pepper. Mix it in. Your guac is now done.

In this entire bowl there's only 245 calories. Its addicting though, so make sure you measure out your chips before you start munching.
My favorite chip to eat with this is all natural jalapeño cheese chips. 130 calories for 15 calories ( I get the chips at winco)





I easily can make a meal of this, also makes a great appetizer or snack. Hope you enjoy!
This recipe was adapted from a little restaurant I went to in San Antonio years ago, I can't remember the name but it was right on the river walk. If I think of the name, I'll update this post.
