What you'll need:
Puff Pastry ( found in the freezer section) * 1 sheet makes 6-8 stars
4 oz cream cheese softened
1/3 C sugar
lemon juice of half a lemon or 1tbl lemon juice
2 tsp vanilla
1 C cold heavy cream
sliced strawberries, blueberries and raspberries
What to do:
Stars;
Roll puff pastry out thin on floured parchment. Cut out star shapes, Or whatever shape you would like. Remove excess dough and transfer cut outs to baking sheet. You can try to roll out and get more shapes out of extra dough but be warned it is a little tough to work with. Bake stars at 400 degrees for 10-12 minutes or until golden.
Filling;
Cream together sugar and cream cheese with mixer. Stir in lemon juice and vanilla, set aside. In a separate bowl whip cream to stiff peaks, fold into cream cheese mix. Refrigerate til ready to serve on cooled pastry stars.
Make sandwiches by taking two stars or splitting one in half. Topping one side with filling and berries and another half of pastry. Enjoy!
I doubled the recipe and enjoyed the filling over angel food cake with fresh berries!
