Momma's Healthy Steak and Veggie Kabobs

Ingredients:

2 large filet mignon steaks ( or steak of your liking)
1 bell peppers, yellow, red, or orange. Whatever you like
1/2 white onion
5-10 mushrooms
3-5 red potatoes ( but you can use 1 regular potato or even a couple white potatoes)
2 Tbsp olive oil
garlic powder
sea salt
pepper
3 cloves garlic crushed

Wood skewers also needed


Directions:
First season your steak. Your first side season with garlic powder sea salt and pepper to taste. Side two use the crushed garlic split between the two steaks. * I snuck in a little extra garlic powder on side 2.

I put the seasoning on my steak and let sit for a couple hours, sometimes overnight, it really helps the garlic flavor to come out. If doing this while making dinner they will be just as good. If the steak is extra large cut into about 6 pieces. If your working with a smaller piece, cut into about 4 pieces.

Then comes your veggies. First heat your potatoes in the microwave. Wash the potatoes off and poke them to ensure they won't burst. Wrap in a paper towel and cook 3-5 minutes (depending on size) on 30%, turning once to other side. You want them tender so they cook on the grill at the same rate with the veggies and steak. Cut your 1/2 white onion in half and then cross ways to have cut it into four quadrants. Put in a large bowl. Cut the stems off mushrooms and add to onions. Cut bell peppers so as to have square pieces about the size of a quarter, a little bigger is fine. Cut red potatoes in half only and put all  in bowl.

Add the 2 Tbsp of Olive oil , garlic powder, sea salt, and pepper to the bowl of veggies and mix up.
Skewer the veggies and meat as you like. Since this is my momma's recipe Ill tell you how she does it as a guide. Skewer  onion, bell pepper, potato, steak, and then mushroom. I also like to put a mushroom on both sides of the steak. Some can take a couple extra veggies or another piece of steak some will not. Makes approximately 5-7 skewers.

Grill on med-high for 5 minutes and turn over and grill another 5 min. Steak will be about medium rare. Once taken off grill cover with foil for 4 minutes to rest. No Longer.  Then Enjoy!
