Slow Cooker Beef Carnitas

What you need:

1lb flank steak (recipe called for 2 but my husband and I ate on this for 4 meals, yes 4!)
1 yellow onion chopped
1/2 yellow bell pepper chopped
1/2 red bell pepper chopped
1/2 orange bell pepper chopped
1 jalepeno seeded and chopped

Spice rub;
2t chili powder
1t cumin
1/4t onion powder
1/4t garlic powder
1/4t cayenne
1t sea salt
1/2t black pepper

To Serve With;
 Corn tortillas
fresh cilantro chopped
sliced avacado
favorite hot sauce or salsa
 sour cream
chedder or mexican cheese mix



What to do:
In a small bowl combine all ingredients under spice rub. Rub flank steak with all of the spice rub and place steak in the bottom of crock pot. Cover the steak with all the chopped veggies and cook on low in slow cooker for 8 hours. After 7 hours take out the steak and shred, my husband and I did this in batches since the steak was falling apart as we took it out. Then put shredded meat back in crock pot and mix with the veggies, let cook atleast another 1/2 hour to hour.

* Note you can serve as is when you shred the beef the first time but I like it mixed with the veggies.

To serve heat tortillas in microwave for 20 seconds on low ( or less). Top tortilla with sour cream, shredded Carnitas from crockpot, cilantro, avocado, hot sauce, and a little cheese! YUM!
