With all the leaves changing colors and the need to kick on the heater at night, just to roast come mid afternoon tells me one thing. Fall is upon us, and as healthy as I am now, baking is a passion of mine, I relly enjoy having my kids help and also having a sweet treat in the house for lunches and the occasional dessert is more than okay with me (and lets be honest, it more than "occasionally") as long as we watch our portions.
These chocolate chip pumpkin cookies turned out so delicious. I used my regular go to recipe for plain chocolate chip cookies and added a few "fall me up" ingredients. I hope you enjoy these fluffy, chewy absolutely delightful cookies.

What you will need:
2.5 C. Flour
1 Tsp. Baking Soda
1/2 Tsp Salt
1 Tsp Pumpkin pie spice
1 C. Salted butter (2 sticks)
3/4 C. packed brown sugar
3/4 C. Granulated sugar
1/2 C. Pumpkin
2 Eggs (room temperature)
2 Tsp. Vanilla
White chocolate chips
Semi sweet chocolate chips
Pre-heat your oven to 375 degrees
In a medium bowl mix together flour, salt, baking soda and pumpkin pie spice. Set aside
In a large bowl mix together brown sugar, granulated sugar, butter and pumpkin, until creamy. Avoid over mixing to prevent your cookies from
being flat and hard.
In my opinion, this is the best shape for butter to be in when making cookies. Ultra soft, I left this out for 2 days.
Add the eggs and vanilla, one egg and one tsp of vanilla at a time. Mix slowly while you stir, you want the batter to look fluffy and light.
You are now ready to start adding the flour mixture to your wet mixture. I do this in thirds to avoid a flour dry mix eruption, and clumping.
Add your chocolate chips, I didn't put a measurement because I don't use a lot of them, about 1/3 of each bag.
* An easy way to make your cookies look more pro is after you scoop out your cookie dough onto the pan, take a few extra chocolate chips and lightly put them on top.
Bake for 9 minutes
- Never EVER open your oven when baking cookies, they will not be all they could have been if you do
- Even if they dont look done at 9 minutes take them out, they will continue to cook on the baking sheet even after they are out.
Transfer to a cool rack, let them cool for as long as you can stand it. I was able to put a few on the cooling rack before I tried one, so like 15 seconds. haha.
This was my first time making these, and am delighted in the way they turned out. It has inspired me to be more ambitious with pumpkin.
