What you need:
1 3/4 C Oats
3 egg whites
3/4 C unsweetened cocoa
1/2 C unsweetened applesauce
1 tsp vanilla extract
1/2 C plain greek yogurt
1/2 tsp cream tartar
1 1/2 tsp baking powder
1 1/2 baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 C hot water
1/4 C honey melted
1/2 C semi sweet chocolate chips
What to do:
Preheat oven to 350 F and line muffin tin with papers or spray tin. I also sprayed my papers just slightly so the muffins would come out easier.
Blend all ingredients together in a blender, except chocolate chips. Once mixture is smooth and oats are are gone (pureed) pour the mixture into a bowl and put in half the chocolate chips, reserve the other chips for the tops of the muffins.
Scoop batter into muffin cups ( careful not to fill too much they do rise a little). Bake for 10 to 14 minutes, or until tops are no longer soft. Pull out muffins and put chocolate chips on top of muffins. Put muffins bake in oven for 4-6 minutes until knife or toothpick come out clean.
