Mini Cinni Rolls

What you need:

Roll
1 can of Pillsbury crescent rolls
5 Tbs brown sugar
2 tsp cinnamon 
dash of nutmeg and ginger
2 Tbs butter melted
1 1/2 Tbs flour

Frosting
1/2 C powdered sugar
1 Tbs milk ( may need more)
1/2 tsp vanilla



What to do:

Use half of the package of dough at a time so that it stays cold. 

In a small bowl mix together all ingredients under Roll except the crescent rolls. I add a little more brown sugar and butter sometimes just depending on how much filling I want. 

Open crescent rolls, take half of dough and separate on vertical seams, press all dotted seams together to make one piece. Spoon on half of your filling mixture and spread over dough. Roll up starting on the short side, cut into 2 inch slices, place all slices on cookie sheet. Continue with next half and Bake in the oven at 350 for 10-12 minutes. 

While the rolls bake make your frosting by simply putting all ingredients together in small bowl and mixing. When the rolls are somewhat cooled drizzle frosting over each roll. 

I like to serve these for breakfast with some turkey bacon or scrambled eggs, a little protein with all that sugar! Enjoy! So easy I promise you will love them.

Chocolate Cannoli Cake


cake

  • 1/2 cup (8 tablespoons) butter, preferably at room temperature for easiest mixing
  • 1 1/2 cups sugar
  • 3/4 teaspoon salt
  • 2 teaspoons vanilla
  • 1/4 teaspoon baking powder
  • 1/4 cup strong brewed coffee cooled, optional
  • 2/3 cup Double-Dutch Dark Cocoa or Dutch-process cocoa powder
  • 3 large eggs
  • 1 1/4 cups Flour
  • 3/4 cup milk

filling

  • 2 cups ricotta cheese, part-skim preferred
  • 4 oz cream cheese (optional; I used the 1/3 less fat)
  • 1/3 cup confectioners' sugar
  • 1 teaspoon vanilla
  • 3/4 cup mini chocolate chips 
  • 2 tablespoons simple syrup, to brush on cake, optional ( easily made with 1 cup water and 1 cup sugar) boil and let cool.

  • 1 cup unsweetened baking cocoa
  • 3/4 cup confectioners' sugar
  • 1/2 cup heavy cream
  • 1/2 cup (8 tablespoons) butter, preferably at room temperature for easiest mixing
  • pinch of salt
  • 1 cup confectioners' sugar, sifted
  • 1 teaspoon vanilla


To make the cake: Preheat the oven to 325°F. Lightly grease an 8 1/2" x 4 1/2" loaf pan. 
In a medium-sized mixing bowl, beat together the butter, sugar, salt, vanilla, baking powder, coffee (espresso powder), and cocoa to make a sandy, somewhat clumpy mixture. The eggs will smooth things out.
Add the eggs one at a time, beating well after each addition. Scrape down the sides and bottom of the bowl midway through this process. Add half the flour to the bowl, beating at low speed to combine. Add all of the milk, beating at low speed to combine. Add the remaining flour, beating gently just until the batter is smooth.
Pour the batter into the prepared pan. Bake the cake for about 70 minutes, or until a toothpick inserted into the center comes out clean. The top may look a tiny bit damp; that's OK. If you have an instant-read thermometer, the center will register 210°F to 215°F, while just under the top will register about 198°F to 200°F.
Remove the cake from the oven, loosen the edges, wait 10 minutes, and turn it out of the pan onto a rack to cool. Store completely cooled cake well wrapped, at room temperature, until ready to fill and frost. I made mine two days before and kept in a large plastic bag with air pushed out. 
To make the filling: 
Stir together the ricotta, cream cheese, sugar, vanilla, and chocolate chips. ( I died mine with food coloring at this point for a little holiday fun). Cover and refrigerate until ready to use.
To make the frosting: sift the cocoa, confectioners' sugar, and espresso powder into a bowl. Bring the cream to a simmer on the stove or in the microwave, and whisk into the cocoa mixture. At first the mixture will look grainy; continue whisking for a minute. You'll see the lumps disappear as the sugar dissolves and the cocoa hydrates. Set aside to cool to room temperature.
Place the butter, salt, and sifted confectioners' sugar in a large mixing bowl. Beat until the mixture is smooth and fluffy. Beat in the vanilla.
 With the mixer running on low speed, add the cocoa mixture a spoonful at a time until it's all incorporated. Scrape the bowl, then beat at medium speed for 1 minute.
To assemble the cake: Split the cake in thirds lengthwise, to make 3 layers. Brush the cut side of each layer with simple syrup, this will help keep the cake moist. Place the bottom layer on a serving plate. Spread with half the ricotta filling. Top with the second layer, and spread with the remaining filling. Place the third layer on top. Ice the cake — top and sides — with the frosting. Be patient with frosting, it is not the easiest but it will go on and it is delicious when served. I set mine in the fridge at this point until after dinner and was wonderful. Set in fridge for about 5 hours. 
Serve immediately; or refrigerate, well-wrapped, until ready to serve, preferably not longer than 24 hours. Cut in crosswise slices to serve. Is best the day of.

Indian Lamb Sliders


What you need:

2 lbs ground lamb
2 large cloves garlic ( more if you like) minced
1tsp ginger
1tsp ground cumin, smoked paprika, onion and garlic powder, and onion flakes
pinch of cinnamon
Dash of cayenne powder or red pepper flakes (more if you like spicy, or add diced bell peppers)
Salt and fresh black pepper
1/2 C- 3/4 C Combination of or choose your favorite cheese ( or no cheese at all); feta, gorgonzola, cheddar. Toss in as little or as much as you like

What to dress them up with:

8 soft potato rolls or sliders ( we love the hawaiian mini slider buns)
baby spinach or lettuce
pickle
tomato
sliced red onion

What to do:

Put all of the top listed ingredients together with the meat and mix. Once all ingredients are incorporated make small burgers. Cook on the grill about 2-4 min each side depending on the size and thickness of your burgers. When you push down on the patty with spatula it should be firm. Last time we made these I topped them with a delicious garlic mayo aioli. 

Simple Garlic Aioli

1/2c mayo
2-4 garlic cloves minced (depends on your taste)
2 tsp Garlic powder
1/2 tsp lemon juice
dash of sea salt and pepper. 

** the longer this sits the more garlic flavor it will have. It can get pretty intense. I let it sit for a hour before serving with burgers.
