Cream Cheese Banana Bread
what you need:
3/4 C butter, soft
1 8oz pkg cream cheese soft
2 C sugar
2 Large eggs
3 c. flour, I used half regular flour and half whole wheat white flour ( couldnt taste the difference)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 C mashed bananas ( 4 med bananas)
1/2 C mixed, milk and dark chocolate chips (optional or 1C pecans)
1/2 tsp vanilla extract
Makes 2 loafs
what to do:
Beat butter and cream cheese on med speed with a stand mixer until creamy. Add sugar, beating until light and fluffy. Add eggs, 1 at a time, beating until blended after each addition. Combine flour and next 3 ingredients in a separate bowl, gradually add mixture to the butter mixture. Beat at a low speed until blended. Stir in bananas, chocolate chips (pecans), and vanilla. Bake at 350 for 1 hour or until a knife or tooth pick inserted comes out clean and sides pull away from pan. Put aluminum foil on top last 15 min to prevent browning if needed. Cool bread in pans on wire racks for 10 min or so then carefully remove and let cool on wire racks for 30 min before slicing.
