Mini Homemade Birthday Funfetti Cupcakes

So I thought with this being my birthday week and funfetti being something my husband and I both love. I would share the easy recipe for HOME MADE Funfetti cake!

2 1/2 C cake flour
1 tsp baking soda
1/4 tsp salt 
1/2 C butter soft
1 1/4 C sugar
2 eggs
1/3 C sour cream
1/4 C vegetable oil
1 tsp vanilla extract
1 C sprinkles I use a combination of jimmies and round colored ones. 

-Heat oven to 350F and line a mini cupcake pan with liners. 
-  Sift flour, salt, and baking soda in a medium bowl
- With a stand mixer or hand mixer, cream together butter and sugar until light and fluffy
- Add eggs in one at a time, mixing well between each one. 
- Add sour cream, oil and vanilla until combined
- Add the flour mixture until all ingredients are incorporated
- Stir in sprinkles
- Pour batter into cupcake pan, filling 3/4 way. Bake 8-12 minutes, or toothpick inserted comes out clean
Frosting;
16 oz cream cheese room temperature
1 1/2 C powdered sugar
1 tsp vanilla
1 C heavy whipping cream COLD
Beat together the cheese, sugar, and vanilla. In a separate bowl beat the whipping cream until stiff peaks form. Add the whipped cream into the cheese mixture and fold in together, or beat but just slightly until mixed.
Wait until cupcakes are cooled before frosting. I frosted
mine by piping on cute designs but feel free to just plant a dollop of the delicious frosting on top of each cup cake, shake some sprinkles over the frosting and your done!
