Pumpkin Chip Oaties

Ingredients:

1/2 C sugar
1/2 C brown sugar
1 C all purpose flour
1 C white whole wheat flour
3/4 C chocolate chips
1/4-1/2 C white chocolate chips
2 C rolled oats
1/2 tsp cinnamon
2 tsp pumpkin pie spice
1 TBl vanilla
1/2 tsp salt
1 C butter
1 tsp baking soda
1 C pumpkin puree
1 egg

What to do:

- Preheat oven to 350 F, line a baking sheet with parchment paper
- In a bowl whisk together flours, baking soda, cinnmamon, pumpkin pie spice, and salt. Set aside
- Beat butter and sugars in a mixing bowl until creamed together.
- Add in pumpkin, egg, and vanilla until combined
- Gradually add in the dry mixture to the wet mixture
- Stir in oats until mixed well
- Stir in both the chocolate chips
- Drop cookie dough in rounds on to cookie sheet.
-Bake cookies 14-15 minutes or until cookies are lightly browned. Do not over cook. They will seem soft, but will firm up as they cool. They do tend to crumble so careful how you store them.
