Mama's Amazing Bruchetta

What you'll need:

2-4 Roma tomatoes finely chopped, depending on how many your feeding
1 plus tbls. olive oil
3 plus tbls. balsamic vinegar
1 tbls finely chopped red onion
Fresh basil to your taste (recommendation is a tablespoon chopped finely)
1 garlic clove crushed
garlic powder, italian seasoning, salt, pepper to taste

Mix all ingredients together and let sit for as long as you can. I make up the bruchetta and let it sit while I then make the garlic bread. When the garlic bread comes out of the oven I then drain the tomato blend through a small strainer to get most of the juice run off out. Then I put it into my serving bowl and serve with garlic toast. *Garlic Toast recipe below

I use garlic bread from Costco but your favorite garlic bread will do. Slice up and butter one side, two if thats what you like. Then I sprinkle on garlic powder and a small small bit of greek seasoning. Pop in the oven on a cookie sheet for 12 min on 400 degrees.

Note* I use smart balance butter to keep things on the healthier side and have had no complaints but use what you like.
