Sweet Potato Fries with Cajun Dipping Sauce

1-3 sweet potatoes depending on how many your feeding
sea salt
cayenne pepper
paprika
nutmeg ( just a little)
garlic powder
olive oil

Heat oven to 415 degrees, Cover a cookie sheet with foil and coat olive oil or olive oil spray.
Wash sweet potatoes, poke them with a knife or fork ( be careful) then wrap in paper towel and heat in the microwave for 4-5 min. on 40% ( do not heat them on 100%) we are not trying to cook them just soften them so we can slice them.

Then slice long ways and lay each piece flat and cut strips to make fry like pieces. ( see photo if confused). You can also cut them the other direction, on their belly as they lay naturally and that will make more of a chip. Both ways are shown below.

Put your fry pieces on the foil covered cookie sheet, once all pieces are down, drizzle with olive oil and season to your taste. Nothing is measured out here, so use as much of each seasoning or experiment with your own. I use half of my seasonings on the first side, put in the oven for 15 min. When they come out flip them over carefully with tongs and season a little more. This side is where I season them with sea salt. Put back in the oven for 12-15 min. Check firmness to your liking. Spicy Cajun dipping sauce

What you'll need:
1 C reduced fat mayo 
1tsp cayenne pepper
1/2 tsp paprika
1/2 tsp chili powder
1/2 tsp Garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
1/4 tsp nutmeg

Mix and enjoy, recipe adapted from Cajun mayo by food.com

** I add more of some and less of others. I also have made this for just a single serving and just sprinkle a little of everything on the dollop of mayo I use.
