Ingredients:
1 3/4 C flour
2 C sugar
3/4 C cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs
1 C strong black coffee, cooled (put it in it makes a different and the cake tastes nothing of coffee)
1 C buttermilk
1/2 C vegetable oil
1 tsp vanilla extract
DIRECTIONS:
- Combine flour, sugar, cocoa, baking soda, baking powder, and salt in stand mixer.
- Add eggs to coffee, buttermilk, oil and vanilla to flour combo
- Beat at a medium speed for about 2 min., batter will be very thin do not worry
- Pour your batter into GREASED and then FLOURED 9x13 pan or two 9inch cake pans ( which is what I did.
- Bake at 350 degrees for 35-40 min. for 9x13 or 30-35 for layer pans
- make frosting and frost after cakes have cooled completely

The Best Cream Cheese Frosting
INGREDIENTS:
4C Powdered sugar Sifted
8 os Cream cheese
1/4 C butter
1/2C cocoa powder ( for chocolate version)
Cream together cream cheese and butter in mixer or by hand ( make sure both have softened to room temp)
Put in powdered sugar little at a time. When fully mixed in then add cocoa and finish mixing. I added in a dash of cinnamon here but it is not needed. Enjoy!
I did layered cakes and first frosted my bottom cake so there is frosting in-between both layers and then added the top layer and frosted the entire cake to thoroughly cover.
